Wildly Delicious Broccoli Rice

You’re going to love this quick delicious recipe…on the table in 20 minutes or less!


1 tbsp coconut oil

8 oz broccoli, cut into florets

1/2 tsp Tone’s lemon pepper

¼ tsp red cayenne pepper

1 small red cabbage (shredded)

2 cups of Organic mixed Wild Rice with Quiona (*Prepare according to package directions)

Cooking Instructions:

Heat the coconut oil in a large skillet or wok

Add the broccoli and stir fry for 2-3 minutes on medium heat

Sprinkle with lemon pepper and continue to stir for 1-2 minutes

In a large bowl toss the cooked Quinoa and wild rice and cooked broccoli until blended

To serve, spoon the Broccoli and rice on to a plate and top with a small amount of shredded uncooked red cabbage toss and serve! The raw cabbage adds a nice crunch and more nutrients!

4 Tips to Stick With a Healthy Eating Plan!

Most of you know I don’t believe in a diet…I believe in a plan. A plan implies a goal and a goal requires focus. Focus is what keeps us on target and helps us build healthy habits. Our habits are what define our lifestyle. So if you’re wondering why most diets don’t work it’s because they are not designed to help us build new habits. I have 4 tips listed below to help you do just that…build new healthy habits!

#1 Practice Mindful eating…put everything on a plate, eat from a smaller plate, chew your food 20-25 times, sit down, don’t eat on the go and turn off the TV when you’re eating.

#2 Quit the Clean Plate Club! But this might not be a problem since you’re eating from a smaller plate, eating slower and chewing your food longer…

#3 Don’t have “Junk Foods” you enjoy readily available in your house. For example I love Kettle Chips…not like, like love. I know this so I never have Kettle Chips in my house for myself or friends. Because I know that even if I have a taste for them the likelihood that I will leave my house to go and get them is not likely, however; if they are in the house…it’s going down…lol

#4 Eat Before you go! This might be the best tip of the 4! I always eat before I go out. This way if there is something you really enjoy you will eat less of it because you’re not as hungry, or it will make it easier to take a pass on the sweets.

Making the Right Choices

That’s the beauty of living in America…Choices and lots of them! So I’ve got some Information and Tips that might help you make better choices:

If a meal that’s high in saturated fat can impair your arteries within hours, imagine the havoc that the fattiest restaurant meals can cause.

At the University of Maryland Medical Center in Baltimore, subjects had their blood vessels tested both before and after eating some of the nation’s highest calorie restaurant dishes. The three-course lunch included a deep-fried macaroni and cheese appetizer from The Cheesecake factory, an Applebee’s bacon cheeseburger wrapped in a quesadilla, and a giant cookie smothered in ice cream from Uno Chicago Grill.

In total: an astounding 6,190 calories and 187 grams of saturated fat. Two hours later, lab tests showed the beating their arteries were taking. One subject’s blood was discolored with fat, another’s endothelial functions was impaired enough that you could hear the difference as sensors picked up his narrowed arteries’ struggle to keep blood flowing.

One meal can affect the health of your arteries. If your arteries are stiff and their lining is impaired, you could be setting the stage for cardiovascular disease and cognitive decline.

Here a few tips to make your arteries more supple:

1. Get regular aerobic exercise…try to get a sweat going!
2. Cut back on sodium and saturated fat…read your lablels

Avoiding the Holiday 10

The Holidays are on their way, get ready!  The latest research states that the average American gains 5 to 10lbs between November and January.  Remember, preparation will be key to helping you manage the barrage of food choices and changes in your schedule. Emotions and stress are all part of the season.  The 10 healthful tips listed below should help you stay in control while enjoying your friends and family:

  1. Exercise will help you manage your emotions and eliminate stress. If you have not been exercising this would be a great time to start. Your time to exercise has to be non-negotiable. So plan to get up 15 or 20 minutes early to use your treadmill or stand and sit continuously while watching the Morning News.  Using my Strength Training DVD, “The Magic is in the Movement” is also an option. Don’t let the lack of time become your excuse for not exercising.
  2. Remember Thanksgiving is not the Last Supper, select only two carbs, i.e. sweet potatoes and dressing, and skip the rolls and corn. Remember only two and watch the portion size, you’ll be happy you did.
  3. Ladies if you’re wearing a sleeveless gown or dress, do 15 pushups off the wall or dresser to show off those great shoulders, bi-ceps and tri-ceps. These exercises will send extra blood to your arms, helping them to look more tone and fit.
  4. Eat before you go to your holiday party. Never go hungry to a dinner party. Eat a high protein source i.e. lean chicken, chili, lentil soup, any of these will satisfy you and help you stay in control and make better food choices once you arrive. Watch your portions, and never skip meals in anticipation of eating at an event; you will be more likely to overeat. 
  5. Re-think your drink!!!  Choose smaller serving sizes of your favorites; alcohol also falls in this category.  Consider a low calorie beer and flavored or carbonated water.
  6. Drink plenty of water. Water is a natural appetite suppressant; drink a glass of water before eating any meal or grazing the buffet table.
  7. Mix up your exercise routines at home to avoid boredom.  Include Strength training, i.e. pushups off of your dresser or wall, squats and leg lifts for abdominals.    
  8. Offer to bring a dish and bring your favorite low fat entree, then go and enjoy!
  9. If you are the Host, help your guest by providing more tasty vegetables and salads. Put the vegetables and salads out first as appetizers before the higher calorie items.
  10. Ask for a gym membership as a gift or Personal Training sessions, this will help you get started and keep you moving through the holidays!

7 Holiday Travel Fitness Tips

Traveling can be especially stressful during the holidays. It’s important to make time for fitness even when you’re on the road.  It will make all the difference in keeping your energy level up and make the long hours of traveling more enjoyable. Here are some quick, easy tips to keep moving in the airport, on the plane and in hotel.

 # 1 Set goals: Working out – whether on the road or at home – requires planning and commitment. Minimize stress by anticipating your needs. If you’re working on a time crunch, fit in 15 minutes of exercise before take-off and make sure to get 15 minutes in once you land.

#2 Stick with Sneakers: If you’re staying at your destination overnight, ask the hotel receptionist if there’s a running path or local park nearby and go for a walk or run. Being outdoors will help you recover from jet lag much quicker.

 #3 Stay hydrated: Cabin air can be very dry, so drink at least 16oz. of liquids before you hop on a plane. Water is the obvious choice but remember all beverages hydrate! Be sure to drink at least 8oz. for every hour you’re on the plane to help avoid dehydration and fatigue.

 #4 Get a Cardio Boost: Try the “Ali Shuffle” – stand up and move feet back and forth alternating until you get into a rhythm. Keep feet low. Begin to pick up the pace then engage the arms and hands as though you were jumping rope. Continue for 2 to 5 minutes, rest, then begin again for 2 more sets.

 #5 Pushup: Hold your head in a neutral position. Stand in front of a counter (at the airport) or dresser (in the hotel) with feet hip-width apart. While standing in front of the counter/dresser, place your hands about shoulder-width apart and lean forward until your chest almost touches the counter/dresser, then push up. Repeat (10 times) for 2 sets.

 #6 Sit & Squat: Work your lower body (glutes, quads and hamstrings) by squatting. Stand in front of a chair and pretend to sit down. As soon as you feel the chair, stand back up. Repeat (10 times) for 3 sets.

#7 Amazing Abs: Lie on your back, cradling your head in your hands. Lift your legs and bring them in and out, alternating at a 45 degree angle slowly. Repeat (10 times) for 3 sets, resting between sets.

Hustle Up the Hancock

The view from the top never looked so healthy, as it did in Chicago, when 10 employees from Loop Capital participated in their first-ever stair climb, “Hustle up the Hancock” (Tower) on Feb. 27–all finishing in less than 15 minutes! The employees, ages 29 to 49, included the Human Resources Director, a company partner and her husband. Founded in 1997, and headed by President Jim Reynolds, Loop Capital provides a wide range of integrated capital solutions for corporate, governmental, and institutional entities.

Loop Capital recruited Norma Rixter, renowned speaker, Certified Personal Trainer and Sports Nutritionist, author, and wellness consultant, to train the employees in a 12-week “Lunch ‘n Learn” nutrition and fitness workshop.

“Hustle Up the Hancock” is an annual fund-raiser for the Respiratory Health Association of Metropolitan Chicago. “I want to commend Loop Capital for setting a new pace in their commitment to the health and wellness of their employees,” Rixter said. In addition to training the employees, the 56-year-old Rixter placed first out of 66 women in her age group of 50-59, in the half climb (52 floors) with a time of 9:05 minutes. Overall, she placed 35 out of 522 women.

What fuels a 56-year-old woman to put herself through what would be considered grueling exercise for a woman half her age? It is the passion arising from a long, arduous journey of self-discovery. Overcoming a diagnosis of Diminished Lung Capacity and the possible onset of MS at age 40, and witnessing her parents’ deaths from lung-related illnesses, Rixter resolved to change her life through diet and exercise. Her cardio machine of choice became the Stair Master. At age 51, she completed her first “Hustle Up the Hancock” stair climb –all 95 floors: 1650 stairs–averaging 100 to 105 stairs a minute, in 17:56 minutes, to win first place in her age group. She now averages 90 to 100 stairs a minute!

With over 20 years in marketing, strategic planning and training for privately held companies, Rixter has written several wellness guides, created a number of audio CDs and videos, and appeared on TV and radio programs, including The Oprah Winfrey Show. She’s earned the title of Pro Athlete as a World Class Stair Climb Champion, tri-athlete and avid distance cyclist (100 mile rides)– all after age 50.

She has also developed The V.I.T.A.L. holistic fitness program, which contains elements of yoga, Pilates, strength training for core, upper and lower body, balance, coordination and flexibility. Her entrepreneurial spirit and corporate expertise have propelled her to the forefront of fitness and lifestyle leadership, bucking age stereotypes.

Rixter advocates women’s health, regardless of their age, echoing President Barack Obama’s message: “We have to help women thrive; when women thrive, we all thrive!” (2009 Chicago Tribune), and the “Get Moving Movement” espoused by First Lady Michelle Obama.

Rixter just released her first fitness DVD, available on, “The Magic is in the Movement,” with a target audience of women 40+. All the women in the DVD are local residents of Oak Park and River Forest and over age 40 — very unique to the fitness industry. The DVD features prominent resident Rochelle Smith Trotter, recently wed to celebrity Chef Charlie Trotter. Besides all that, Rixter still manages to find time to train corporate teams to stair climb and works out at least an hour a day, five days a week, plus teaches a daily 6 a.m. cardio class.

Rixter completed NSA Speaker University and graduated with a B.S. with honors in Special Education from HBC, Chicago State University. She received her M.S. in Information Technology from Roosevelt University. Her community involvement includes offering free Health and Wellness seminars to the public, participating in the “High School Literacy Program” and “Teens for Tennis.” She also donates her time and resources to Breast Cancer Awareness, The Lung Association and Respiratory Health Association.
